- 1 large zucchini, very thinly sliced (use a mandoline)
- ½ Tablespoon olive oil

- Preheat air fryer at 270º F for 2 minutes
- Place the zucchini slices in one single layer between paper towels to help draw out the liquid.
- Place the zucchini slices in a single layer in the air fryer basket.
- Brush with olive oil. Sprinkle with salt or any seasoning you desire.
Air fry at 270F for 12 to 15 minutes or until golden brown and crispy. - Cool in a cooling rack and repeat with remaining zucchini coins.

- Preheat the oven to 225º F. Line a baking sheet with parchment paper and set aside.
- Place the zucchini slices in one layer between paper towels to help draw out the liquid.
- Place zucchini slices in a single layer on the prepared baking sheet. Brush zucchini with olive oil, sprinkle with salt or any seasoning you desire, or even parmesan cheese.
- Bake for 2 hours, or until the zucchinis are golden brown and crispy (If some slices are still soft, place them back in the oven until they are golden brown and crispy).
Cool in a cooling rack before serving.
NOTES
- Use a mandoline to get perfectly sliced zucchini.
- Placing the zucchini between paper towels will help them to crisp up in the air fryer.
- Start checking around 12 minutes and remove those that are done and keep air frying those that aren’t crispy yet.
- You can use cooking spray oil if you don’t have a silicone brush.
