- 4 cups Mashed potatoes (preferably chilled)
- ½ cup All-purpose flour
- ½ tsp Salt
- ¼ tsp Black pepper
- 1 Egg
- ¼ cup Oil Avocado oil or coconut oil works well)
- Preheat air fryer to 350°F (177°C).
In a medium bowl, mix together mashed potatoes, flour, salt and pepper until evenly combined. Make sure all clumps are broken up.
Get a small bowl and crack an egg into it, beating lightly with a fork until the yolk is just broken up – don’t over mix it!
Add the egg mixture to the mashed potato mixture and mix until fully incorporated.
Divide the batter into 8 equal parts using your hands or a spoon and form each part into a flat patty about 3 inches wide and 1 inch thick – this should yield 8 patties total.
Place the patties into the preheated air fryer basket; brush lightly with oil then cook for 20 minutes at 370°F.
Flip over each patty after 15 minutes of cooking time.
After 20 minute, they should be slightly firm on the outside with golden color similar to regular french fries when done properly!
